Mexican cauliflower tortilla

Cauliflower tortillas are a  great replacement for flour tortillas made from ground wheat flour.

Cauliflower tortillas ingredients

  • 300 g cauliflower
  • 1 large egg
  • Herbs and spices i.e. Mexican spice blend
  • Salt f.ex. Herbamare
  • Chili ground spice and flakes

 

The method of making cauliflower tortillas

First shred the cauliflower into rice in a food processor. Cook the cauliflower rice in a microwave for 8 minutes. Then place in a dish towel and squeeze out all the liquid from the cauliflower. Please be careful because the cauliflower is steaming hot and can easily burn your fingers. Probably best to wait until it has cooled down a bit.

Next weigh ca. 100 g of the cauliflower. Break an egg into a bowl and mix the white and the red together. Weigh 30 g of the  egg mixture and add it to the 100 g of cauliflower. Add all the spices and herbs you want to flavour your tortilla. Make a second tortilla the same way weighing 100 g of cauliflower with 30 g of egg mixture.

Next form two tortillas on a baking tray and cook in a fan oven at 200°C for 20 minutes.

Ideal Dinner: 50 g ground beef or chicken, all the vegetables you desire, sugar free salsa sauce (no added sugar) and 20 g of yogurt with tiny bit of Stevia sweetener and /or spices to add some flavour.
