King prawns with rocket leaves and dressing

King Prawn Salad:

  • 100 g thawed and fully cooked king prawns
  • Rocket lettuce -30-50 g
  • 15 g mayonnaise
  • Water
  • Herbamare salt
  • Black pepper
  • Chili flakes

Lightly fry the king prawns in butter on a pan and season with salt and pepper and chilli flakes.

I usually make the wheat germ bread in the microwave because that is quickest and easiest and also means that I can do one slice at a time. I made a 50 g wheat germ bread to go with this salad.

The dressing contains 15 g mayonnaise, 15 g rocket leaves, little bit of water and salt and pepper. This gets all mixed up with a hand blender.

Next you can plate everything up. First the remaining rocket leaves, then the bread and the prawns on top of the bread. Last add the dressing over everything to juice it up.
