Hotdogs with cold parsnip salad

I have always loved hotdogs with potato salad so I wanted to find an alternative for the salad. The outcome is this delicious parsnip salad.

Salad Ingredients:

  • 100 g parsnips (boilded for 10 mintues)
  • 20 g onions
  • 15 g leek
  • 20 g mayonnaise
  • Salt and pepper

Peel the parsnips and cut into rather small dices. Boil in lightly salted water for ca. 10 minutes.

Cut the onions and the leeks.

Weight 100 g of boild parsnips and put in a bowl. Mix the other ingrendient in with the parsnips. Add salt and pepper according to taste.

The salad is served with cooked hotdogs, wheat germ bread, fried onions and mushrooms, sugar free ketchup or tomato sauce, sugar free mustard (dijon) and 10 g of remoulade.

Dinner: Hotdogs (110 g), fried onions and mushrooms (50 g), parsnips, onions and leed (135 g). Remoulade (10 g) og mayonnaise (20 g). Wheat germ bread (30 g).
